Jalapeno Cheese Pan Bread

1/2 cup Atkins Bake Mix
3/8 cup half and half
1/4 cup water
1 egg
1/2 cup shredded cheddar cheese -- or monteray jack
1/8 cup chopped jalapeno
olive oil

Combine first 4 ingredients and blend until smooth. Add cheese & jalapeno. Heat olive oil on medium heat in non-stick griddle or pan. Spoon batter onto griddle and cook both sides until brown. This will make three 5 inch pieces of pan bread. Or you can make smaller pieces if you choose. The bread will store nicely in individual sandwich baggies in the fridge. When you are ready to eat them, pop them in the microwave for 20 to 30 seconds.

Serving Suggestion: Cut the five inch pieces in half and use to make sandwiches. Make smaller pieces and top with cream cheese. Your fingers will get a little oily when you eat the sandwich, but it really tastes delicious.
