DeeB4's "Doctored" RYE BREAD RECIPE 2

1/4 cup unbleached flour
1/4 cup whole wheat flour
1/4 cup rye flour
OPTIONAL: 1/4 c. protein powder...any kind...or soy flour if you like)...add
appropritate carbs to total for recipe.
2 tablespoons caraway seeds
1 teaspoon baking powder
1 packet artificial sweetener -- dry stevia
4 eggs -- separated
1/4 teaspoon seasoned salt -- Lawry's has no msg
1/4 cup ricotta cheese
1/4 cup butter -- melted
1/4 teaspoon cream of tartar

Preheat over to 350.
Mix flours and caraway seeds together. Beat in egg yolks and sprinkle
with seasoned salt and sugar substitute. Mix cheese with butter, add dry
ingredients and blend well. Beat egg white with cream of tartar until
stiff. AND I DO MEAN STIFF!! Fold in
dry ingredients verrrrrrrrrrrrrrry slowly trying not to breakdown the
egg whites. Spoon into small oiled loaf pan and bake for 50 mins. or until
done (test with toothpick). Remove and cool completely.

( NOTE: I have increased the amounts in the original recipe to give you
a decent sized loaf you can then slice very thin, when cooled completely
or refrigerated. Toasted, this stuff is terrific. Try it with cream cheese in
the morning and maybe a tsp. of all-fruit/no sugar jam or smoked salmon, caviar, go crazy! The
original recipe is in the above referenced book and states it makes 12 slices at
2.0 carbs each or 23.7 for the loaf. This one is higher in carbs, but slices
better and makes a better loaf .. That way, you can slice thin and still stay at roughly 2 carbs per
slice. If you add the protein or soy flour, the loaf is slightly more dense,
it has a good moist and chewy consistency.)
