Dee's Doctored Rye
Bread Recipe

1/2 cup unbleached flour
1/4 cup whole wheat flour
1/4 cup rye flour
1/4 cup atkins bake mix
1/4 cup Designer Protein (Vanilla or Vanilla Praline)
3 tablespoons rye seeds
6 eggs -- separated
1/2 teaspoon seasoned salt -- Lawry's has no msg
3 packages artificial sweetener -- (sugar substitute of choice
but must not include aspartame...doesnt react well with heat)
6 tablespoons ricotta cheese
6 tablespoons butter -- melted
1/4 teaspoon cream of tartar
Preheat oven to 350.
Mix dry ingredients and and seeds together. Set aside. Beat egg
yolks,
seasoned salt, and stevia. Blend in cheese and butter with egg
yolk
mixture. In separate bowl beat egg whites and cream of tartar
until stiff.
Fold into egg yolk mixture. Add dry ingredients in 3 or 4 increments,
folding gently until blended. Spread into 3 small or one 8x4
loaf pan,
sprayed with cooking spray (like PAM). Bake until brown and toothpick
comes out clean. Pop out of loaf pans. Allow to cool completely.
I get anywhere from 10-15 slices
per mini loaf and more from the bigger
ones....I slice it fairly thin and toast it or broil with butter
and
cinnamon/splenda for cinnamon toast.
I found this a better consistency
than other Atkins' rye bread recipes...
