DAR's Cinnamon Low Carb Flax Meal Muffins

Liquid Ingredients:
6 tablespoons Safflower Oil
3 Large eggs
6 tablespoons water
1 tablespoon liquid sweet'n'low
1 tablespoon vanilla extract -- imitation
Dry Ingredients
1 Cup flax seeds -- grind them into flour
1/2 teaspoon baking powder -- rounded
1/2 teaspoon baking soda -- rounded
2 tablespoons ground cinnamon
Beat the liquid ingredients together and set aside.
Mix the dry ingredients well and add to the liquid ingredients and stir
until well blended. Put into 12 microwave muffin pans and cook on high
until dry on top. In a 1000 watt oven it takes 2 minutes 10 seconds.
