Fluffy Flax & Cream Cheese Pancakes

2 eggs
1/4 cup ricotta cheese -- whole milk
1 ounce cream cheese
2 splenda packets
3 tablespoons flax meal
(or grind your own seeds & measure after grinding)
1 tablespoon protein powder - vanilla or plain
1 teaspoon baking powder
1 pinch baking soda
Whip eggs in blender until foamy. Add ricotta and cream cheese
and blend until smooth. Add rest of ingredients and pulse until
blended.
Cook on oiled griddle. These are very tender, so it's best to
make them smallish so they're easier to flip. Also, the flaxseed
makes them brown a bit faster than you might expect...I usually
use medium heat.
