Cottage Cheese Pancakes

1 cup cottage cheese
3 eggs
5 tablespoons soy flour -- depending on preference)
3 tablespoons butter -- melted
1 packet artificial sweetener
Mix all together until smooth
(blender works great). Make small
pancakes (they're rather delicate and will tear if you try to
make them too
heavy), and top with butter and your favorite low-carb syrup.
