Blueberry Scones (Adapted from the Atkins recipe)

2 cups Atkins Bake Mix
2 teaspoons baking powder
1 tablespoon lemon zest
1/2 teaspoon salt
3 splenda packets
1 cup frozen blueberries
1 cup sour cream
2 each large eggs
3 tablespoons buttermilk
1/2 teaspoon vanilla extract
1 tablespoon buttermilk -- additional
2 each splenda packets
Preheat oven to 350f. Spray an 8" square pan with butter flavor cooking
spray lightly and set aside. In a large bowl, mix bake mix, zest, salt,
baking powder and sweetener. Stir in frozen blueberries. In another bowl,
mix sour cream, eggs, vanilla and 3T buttermilk until smooth. Stir gently
into dry ingredients (this is where the frozen berries work better -they
take more stiring and don't break up) until a rough dough is formed, then
pat it into the prepared pan. Brush with remaining buttermilk and sprinkle
with remaining sweetener. Bake for 15 minutes, then cut into 9 squares.
Cover and bake an additional 30 minutes. Serve warm with butter or cream
cheese.
