Corn Dog Nuggets

hot dogs
keto pancake mix
oil - enough to deep fry
Pour 2-3 inches oil in a small pan and heat over med heat.
Prepare pancake batter as per instructions on the box. I add a little
vegetable oil and one pkt Sweet & Low to the batter.
Cut hot dogs into thirds. Dip hot dogs in pancake batter. Thouroughly
cover dogs with batter. Carefully place in hot oil. Batter will try to
"drip" below the dog. Just turn it over and it will stop and cook
somewhat evenly.
Cook until a nice golden brown. This takes about 5-10 minutes. (I've
discovered it's best to take it slow or the coating will be flakey.)
Remove from the oil and drain on papertowels.
These are awesome! They really taste like a corn dog! The batter does
come off fairly easily, but you can hold it on and eat it all together.
Great with mustard!
NOTE: I've noticed that most hot dogs have 5 carbs each, but for a little
more money (not much) you can find hot dogs that are one carb (any less,
please let me know). Look for ones with no fillers. The smallest batch of
pancake mix is more then enough to do 3 or 4 full dogs, probably more, and
only 3 carbs. Even with 5 carb dogs, a set of three nuggets can't be more
the 6 carbs, and can be as low as 2!
